I hope you all had an awesome Christmas! This year was my third Christmas on SCD (Specific Carbohydrate Diet) and it was completely different from the first two!
Christmas 1 - 2011 - I'd only been on SCD for a few weeks and really had no idea what I was doing. I decided I'd eat anything and everything on Christmas Day and worry about the repercussions later. I really enjoyed all the wonderful, traditional Christmas treats, but I did pay for it over the next week or so.
Christmas 2 - 2012 - I was feeling so well and so healthy after allowing my body to heal by following SCD very strictly for one year. I thought I deserved a treat and thought my tummy could handle it, so again I ate anything and everything on Christmas Day including plum pudding, mince pies, shortbread and my awesome rum balls. I remember enjoying it all immensely and my tummy wasn't too displeased with me, settling down in a couple of days.
Christmas 3 - 2013 - This year I had no desire to eat anything that wasn't SCD. Now if you know me, you'll know what a huge statement this is. I truly LOVE chocolate, mince pies, shortbread and plum pudding. Heaven! But my tastes have changed. I've only eaten things that aren't SCD on about four occasions this year. The last time was a huge piece of Chocolate Mars Bar Cake about six months ago. But I guess I have learned that, for me, it's just not worth it. That piece of chocolate cake didn't taste as wonderful as I remembered and this is how it affected me: The worst thing was that the following day I just felt AWFUL. I felt hungover and so foggy in the head. I know it's not good to be so vain, but I LOOKED awful too! Haggard and old! Ahhh! :) And my tummy was very upset for a week and a half. Truly not worth it...
So this year when Christmas time started getting closer, I decided to try and recreate some of my favourite treats so I could eat them and not feel deprived. I'm so pleased with how they all turned out. If you haven't already, check out my Plum Puddings with Custard, Vanilla Shortbread and Fruit Mince Slice.
But you know me, I love a good cookie! This is the recipe I've been playing around with recently. I love these cookies because they are so chunky. They are full of nuts and fruit and contain no additional sweetener. I've found I feel best if I keep honey for special occasions and this recipe doesn't need any additional sweetening. These cookies are perfect for the lunchbox, picnics or travel; lots of good fats and energy. If you're a breakfast cookie sort of person, these would be perfect. :)

Chunky Fruit & Nut Cookies.
Prep time: 10 mins
Cook time: 10 mins
Makes 16 cookies.
Ingredients:
1 cup dried dates
1/4 cup orange juice
2 cups mixed nuts (eg. almonds, cashews, walnuts & macadamias)
1/2 teaspoon mixed spice (combination of cinnamon, nutmeg & all spice)
2 Tbsp coconut oil
2 eggs
1/2 cup desiccated coconut
Instructions:
- Preheat oven to 170 degrees Celsius (340F).
- Put the dried dates and orange juice in a microwave safe bowl and microwave for 2 minutes.
- While that's cooking, process the nuts in a food processor until chopped, but not too fine! (definitely not until it makes nut butter!)
- Put the microwaved dates and juice, along with the spice into the food processor and blitz again to combine.
- Put the mixture into a bowl and stir through the coconut oil.
- Beat in the eggs.
- Lastly, fold through the coconut.
- Scoop tablespoons of mixture onto baking trays lined with baking paper. Use the back of the spoon to press into a circular, flat shape. (Shape does not change during cooking.)
- Cook in oven for 10-12 minutes, until just brown.
- Cool on trays, then eat.
- Store in fridge or freezer. :)
Also, chunky nuts and dried fruits aren't the easiest foods to digest for anyone! They are considered advanced foods on SCD. If you're in earlier stages, processing the nuts until they form a butter would be easier to digest. :)
