This one uses almond and coconut flour.
Paleo SCD Bread
Prep time: 5 mins
Cooking time: 25-30 mins
Yields: 10 pieces
Ingredients:
3 tablespoons coconut flour
¼ teaspoon sea salt
1 ½ teaspoons baking soda
4 eggs
¼ cup coconut oil, melted
1 tablespoon apple cider vinegar
Instructions:
- Mix dry ingredients together.
- In a separate bowl, mix wet ingredients together.
- Add wet ingredients to dry and whisk together until blended well.
- Pour into a loaf pan lined with baking paper.
- Cook at 180 degrees Celsius (350 degrees F) for 25-30 mins.
- Slice when cool.
- I'm storing mine in the freezer so I don't eat it all at once!
Note: using an aluminium pan can turn your bread green.
For best results, use a glass pan. :)

Can you use vegetable oil instead of coconut oil? And white vinegar instead of apple cider vinegar?

ReplyDeleteI made this and the only thing I substituted was the vinegar. I found a recipe except I used white vinegar. And I added honey to sweeten in a little bit. When I took it out and let it cool and started cutting it smelled like a strong ammonia smell. did you have this smell?
ReplyDeleteOh dear! I just googled the difference in the vinegars and one post said there a big difference in flavour when used in baking. Sorry it didn't work out.
DeleteAfter some research I found that vinegar can react with a nonstick pan and can cause the chemical smell and taste and discoloration. I got a glass pan and did not have this problem.

DeleteI baked this bread today. Followed the directions exactly, it actually tastes really close to regular bread (with a slight coconut scent) Overall, a "bread win" for me. Did your bread rise at all? Mine didn't. Thanks for posting!
