Easy Chocolate Cookies (Paleo)

Is there anything in the world better than the smell of cookies baking?  
Hmm, maybe the smell of a newborn baby or a freshly picked rose (just got those from my garden yesterday - first for this spring.)   Anyway, my house smells awesome after baking these cookies.  It's raining outside and inside there are cookies.  :)
These are an adaptation of my  Gingernut Cookies which are a family favorite.  If my kids ever say, 'Are there any more of those cookies?' they are the ones they mean. 
I hope these will become a family favorite at your house.  They are so simple to put together and quick to cook.  Be careful, though, they cook very quickly.  They are very easy to burn!

Easy Chocolate Cookies.

Prep time 5 mins
Cook time 8-10 mins
Makes 26 cookies
Ingredients:
1/4 cup cacao butter (melted in microwave)
1/4 cup coconut oil (melted in microwave)
1/2 cup honey (warmed in microwave)
2 cups almond flour
1/4 cup coconut flour
4 Tablespoons cacao powder
1/2 teaspoon baking soda

Instructions: 
  • Combine dry ingredients in a mixing bowl, breaking up any lumps.
  • Add melted cacao butter, coconut oil and warmed honey and mix to combine.
  • Line baking tray with baking paper.
  • Roll teaspoons into balls and flatten onto baking tray with palm of hand, allowing room for spreading.
  • Bake in 160 degree Celsius (320F) degree oven for 8-10 mins.
  • Cool on trays.
Notes:  If you don't have cacao butter, just use 1/2 cup coconut oil. :)
Cooking time:
Like the Gingernut Cookies, you can control how chewy or crunchy you want this cookies by adjusting the cooking time.  In my oven, if you take them out after 8 minutes you get a chewy cookie.  But if you leave them in for an extra 2-4 minutes, they get crunchier and crunchier.  Have fun experimenting with how you prefer them. :)
