After being on the 21 Day Sugar Detox for a couple of weeks now, I realise I've been in a sweets phase my whole life! When I baked as a teenager the only savory thing we made was pizza. I'm really not a savory person. I actually envy those people who really prefer savory over sweet; they don't seem to be as addicted as us sweets lovers. :)
This detox has been good for me to focus on savory rather than sweet. I'm enjoying trying new meals for dinner and my kids were so excited to hear I was making savory muffins! (Guilty mother moment - I don't think I've EVER made them savory muffins before! Poor kids. :)
Tomato & Bacon Muffins.
Prep time: 10 mins
Cook time: 15 mins
Makes 8
Ingredients:
1 small onion
6 short cut bacon rashers
4 eggs
1/3 cup tomato paste (100g) (homemade for SCD or check ingredients)
1/2 cup almond milk
1/4 cup coconut oil
1/2 cup coconut flour
1/2 teaspoon baking soda
salt & pepper
Instructions:
- Preheat oven to 175 degrees Celsius (350F)
- Grease 8 muffin pans with melted coconut oil.
- Finely dice onion and bacon.
- Brown in a fry pan.
- Beat eggs with electric mixer until frothy.
- Add tomato paste, almond milk, baking soda, salt & pepper and mix.
- Add coconut flour and beat again.
- Melt coconut oil in the microwave and beat to combine.
- Fold through three quarters of the cooked bacon and onion mixture.
- Divide mixture between muffin pans.
- Top with reserved bacon and onion.
- Bake in oven for 12-15 minutes.
- Cool before removing from tins.
- Enjoy.
- Keeps well in the fridge and are awesome for breakfast. :)

This puts such an interesting spin on muffins! Can't wait to try.

I know this recipe was posted months ago but I just made it for my 21 day sugar detox dinner tonight and they are so so so so so good! I'm definitely going to make these often. They are easily adaptable too with additional herbs, turmeric, shredded zucchini, whatever. This was so yummy! Thanks for sharing :-)

DeleteDelicious! And works with our very tricky diet plan! Even my picky teenager likes them. 😃 I added chopped artichoke hearts and grated zucchini. Yum!
