So I try to follow Mum's example and be super encouraging whenever my teenagers do some cooking.
My middle child, Daisy, who is 18, has been making some wonderful, healthy food lately. She instragrams her cooking and blogs as well.
Anyway, this weekend she said she wanted to try making Bliss Balls. Now I obviously live under a rock and it's just as well I have teenagers to try and keep me up with the latest, because I'd never heard of them before. Hers turned out fabulously and you can read all about it here. :)
Her recipe included lovely things like cacao nibs and chia seeds which I can't eat, so I thought I'd try my own version. After much googling it seems all you need to do is combine nuts, fruit and oils and roll them in coconut. Easy! So here's my first version. I love them. You can make them with raw nuts, but I love the taste of them roasted.
NB: You might want to try halving this recipe if you don't have a house full of hungry teenagers. :)
Bliss Balls.
Makes around 45
Ingredients:
3 cups of nuts (I used 1 cup almonds, 1 cup cashews & 1 cup of a mixture of hazelnuts, walnuts and macadamias)
2 cup dried & pitted dates
1/2 cup coconut oil
1/4 cup cacao butter
1/4 cup honey
1/2 teaspoon vanilla powder
coconut for rolling - about 1/2 cup
Instructions:
- Roast nuts in a 180 degree Celsius (350F) oven until starting to brown. (around 15 minutes)
- Meanwhile, melt the cacao butter, coconut oil, dates and honey in the microwave.
- Grind roasted nuts in a food processor until very fine. (The finer the better).
- Add date mixture and vanilla and process to combine.
- Press tablespoons of mixture into ball shape and roll in coconut.
- Store in the fridge.
- You can eat these straight from the fridge, or bring to room temperature to soften slightly.
